Jicama Salad

This salad is great for summertime! I love it as a side dish for fish and tacos, or better yet, fish tacos! Jicama is crunchy & refreshing, and the peaches are sweet & juicy. What more could you ask for?!

  • 1 jicama, peeled
  • 1 small bunch radishes
  • 2 carrots
  • 1 peach
  • 2 Tbsp chopped cilantro
  • 1/2 Jalapeno
  • Juice of 1 lime
  • 1 teaspoon olive oil
  • Salt & pepper to taste
  1. Cut the jicama, radishes, carrots, and peach into matchstick-sized pieces
  2. Combine the remaining ingredients in a bowl. Enjoy!
