Meatless Monday

Ever heard of it? Or it can be Meatless Tuesday, Wednesday, etc–your choice. The point is to give up meat for at least one day each week. Why? It will help you:

  • Lower cancer risk
  • Reduce heart disease
  • Fight diabetes
  • Curb obesity
  • Live longer
  • Improve your diet
  • Reduce your carbon footprint
  • Help reduce fossil fuel dependence
  • Minimize water usage: The water needs of livestock are tremendous, far above those of vegetables or grains. An estimated 1,800 to 2,500 gallons of water go into a single pound of beef. Soy tofu produced in California requires 220 gallons of water per pound.

I know not eating meat for one day might seem nearly impossible to some people, but trust me, it can be very hearty and delicious! The first step might be to continue the way you currently eat, but cut down on meat portions all together. Help yourself to more vegetables instead. On meatless days you can opt for beans/legumes, mushrooms, soy, nuts, or 100% whole grains.
